1200-TH/III Deluxe Cook & Hold Oven
The dual-compartment 1200-TH/III Deluxe Control Cook & Hold oven is ideal for cooking large volumes of food in a limited amount of space. Halo Heat® technology, powered by unique thermal cabling, produces gentle, precise heat to evenly cook your food. Significant moisture retention relates to longer holding life and extra servings from each item prepared.
*Capacity – 240 pounds, 108 kilograms (120 pounds, 54 kilograms per cavity), 8 full-size/GN 1/1pans (4 full-size/GN 1/1 pans per cavity on optional wire shelves.)
Halo Heat - No fans, forced air or added humidity allow for greater moisture and even cooking. 
Greater yield & better quality - Halo Heat tenderizes even the toughest cuts of meat by activating their natural enzymes.  Meat stays tender after several hours or even overnight.  
Records cooking temperatures – When cooking by probe the 1200-TH/III will record the highest and lowest temperatures sensed by the food probe, assuring that foods are cooked to required temperatures.
SureTemp™ maintains heat levels – If the door is opened the exclusive SureTemp system immediately responds to compensate for any heat loss.
